It’s getting to be that time of year again when there is the slightest chill in the air. And that means autumn flavors like acorn squash, sweet potato, and PUMPKIN!! This is one of our seasonal treats at See Spot Eat. Definitely more of a treat than a trick!
Pumpkin CinnaBone
Ingredients
2 3/4 c Whole wheat flour
1/4 c Wheat germ
1/4 cup Oats
2 tsp Cinnamon
1/2 c water
1 Eggs
1/4 cup Pumpkin
1/3 cup Canola oil
Preheat oven to 350 degrees.
Mix all dry ingredients together. Combine wet ingredients together. Slowly add the dry ingredients to the wet ingredients and mix with dough hook of mixer or mix with mixer until just moistened.
Knead dough for 5 minutes – folding in small amounts of whole wheat flour as necessary. Roll dough out to 1/2 inch. Cut dough into desired shapes and place on ungreased cookie sheet.
Bake cookies for 20 minutes. Flip cookies over and bake 15 more minutes. Turn off oven and let cookies stay in oven for several hours or overnight.
Store in an airtight container. Keeping treats refrigerated for longer life. Treats should keep well for 2-3 weeks.
